Ingredients:
- 1 package brown rice pasta
- 3 chopped ripe tomatoes
- 1 chopped onion
- 8 - 12 shredded basil leaves
- Premade or prepackaged black or green lentils
- Veggie broth for sautéeing
- Salt and pepper to taste
Instructions:
- Cook pasta according to package directions.
- Heat a very small amount of broth (about 3 tbsps) in a pan. Add the chopped onion. Sauté and keep adding broth a few tablespoons at a time until the onion is soft and almost cooked all the way.
- Add chopped tomato and cooked lentils. Mix until combined well.
- Add shredded basil and toss until wilted.
- Add salt and pepper to taste.
- Serve lentil bolognese over pasta and enjoy.
