Fried Catfish with Smoked Jalapeno Relish


Fried Catfsh
4 catfish fillets (5 ounces each) ​
1 cup butter milk
1/2 cup fine cornmeal
1/3 cup all-purpose flour
1 tablespoon Old Bay seasoning
1 teaspoon cayenne pepper
Canola oil for frying
Smoked Jalapeno Relish
1 white onion, diced
2 jalapenos, seeded and diced
3 cloves garlic, minced
2 red bell peppers, seeded and diced
5 drops Liquid Smoke
Juice of 1 lemon
1 tablespoon sugar
2 tablespoons canola oil
Salt to taste

Soak catfish in buttermilk for 1-2 hours.
Mix cornmeal, flour and spices together in a shallow dish.
Heat oil to 350​°F. Remove the fish from the buttermilk, dredge in flour mixture and place in frying oil.
Cook for 4-5 minutes, or until golden brown.
Remove fish from oil, and place on a paper towel to drain excess liquid.

Smoked Jalapeno Relish:
Heat oil in a frying pan over medium heat.
Add onion, jalapenos, garlic and peppers and cook for 6-8 minutes. Add sugar, lemon juice, Liquid Smoke and salt.
Cook for another 2-4 minutes, until nearly all liquids have evaporated. Remove from the pan, and cool.
​Serve alongside the fried catfish.
